This recipe is one-bowl and has just banana-chocolate flavor, which is my favorite. I’ve actually tweaked it quite a bit over time to be simpler, which is all the more reason to make it often!
Ingredients (makes 1 large loaf)
6 small, very ripe bananas (or 5 medium)
⅔ cup refined coconut oil
1 cup coconut sugar
1 tsp vanilla
2.5 tsp baking powder
¼ tsp salt
3 cups brown rice flour
1 cup chocolate chips, plus more to top
Mash bananas in a bowl with a fork & whip them slightly. Add coconut oil & vanilla and mix well.
Next, add baking powder, salt, and brown rice flour and fold/mix into batter until well-incorporated. Stir in chocolate chips.
Add to a lightly oiled loaf pan and top with chocolate chips. Bake at 350F (on middle or lower rack) for 45-50 min, then shut off oven and allow to cool completely in oven.
Serve while warm, but this also is very good the next day (have it with your coffee & thank me later). Enjoy! .
