Coconut-Fried Vegan Shrimp

Ingredients:
May Wah NYC vegan shrimp
½ cup arrowroot starch
½ cup aquafaba
1 cup coconut flakes
Oil for frying

Juice of ½ lime
4 tbsp Ninja Squirrel Sriracha
½ cup Sir Kensington’s Fabanaise (or other vegan mayo)
.
To prepare:
Boil shrimp for 5-10 min and allow to dry.

Dip in arrowroot, aquafaba, arrowroot again, aquafaba, and then coconut flakes to build a batter.

Fry for a couple of minutes on each side until golden. Lightly salt.

To make sauce, mix ingredients well and adjust to taste. Enjoy! .
