This is inspired by the fast food Burger King flaming mac and cheetos. The difference? These are a lot better, obviously! Plus, you can make them yourself very easily. Think about how much power that gives — use it wisely.
Doritos-style mac and cheese fries:
- 1 box Daiya deluxe mac and cheese, prepared
- 1 can’s worth aquafaba
- ½ cup arrowroot starch
- ¼ cup nutritional yeast
- ½ tsp smoked paprika
- 1 tsp salt
- ¼ – 1 tsp chile powder
- High-heat oil, for frying (I use grapeseed)
Spread out prepared mac and cheese on a parchment paper lined baking sheet, cover with another piece of parchment paper and freeze 4 hours or overnight. Using a pizza cutter, slice frozen mac and cheese into approx. 1 inch by 4 inch pieces (you may need to let it thaw slightly to cut). Put aquafaba into one small bowl, arrowroot in second bowl, and in third prepare spice mix (nutritional yeast, smoked paprika, chile powder and salt). Dip each “fry” into aquafaba, then starch. Heat oil and fry mac and cheese pieces, turning over until crisp on edges (starch may not turn golden but is still crispy!). Put on paper towel out of pan to absorb excess oil and roll in spice mix while still hot. Enjoy!
