Coconut date rolls have always been the ultimate treat for those of us who get unreasonably excited in health food shops :] The only catch was trying to time buying them to when they were freshly made, when they’re soft and melt in your mouth. Rather than waiting for the stars to align, try making them for yourself!
1 cup organic dates, pit still in
1/2 cup shredded coconut
3 tbsp+ water
Remove pits and any remaining stems from the dates. It’s important to get dates with the pit in, as the process of storing them without the pit dries them out. Blend the dates and water until soft and paste-like (you may need to scrape down the sides and mix in between rounds). Transfer to a bowl and mix by hand if still a bit uneven.
Take about one heaping tablespoon at a time of the mixture and loosely shape it into a ball – dip into coconut flakes and continue shaping into a cylinder shape. Store in an airtight container and enjoy!
