Whole foods, based, oil free, Vegan … and very, very hard to convince people that this is actually healthy, given how decadent it tastes
- 2 cups raw hazelnuts
- 3 cups dates
- 1 tbsp coconut oil
- 2-3 avocados, depending on size
- 1/4 cup+ raw cacao (or cocoa if not as strict on “raw”)
- 1 banana
Combine hazelnuts (leaving aside a few for decoration), 2 cups dates, coconut oil, and approx 2 tbsp cacao in food processor. Pulse or mix on low until forms a course mixture that sticks together easily. Press into a tart pan; set aside.
Add remaining dates, avocados, cacao, and banana to food processor and blend until creamy. Spoon mixture into pie crust, spreading evenly. Decorate with remaining hazelnuts. Store this dessert in the fridge until serving.
